Biography

Beatrice Choi is a Postdoctoral researcher in Nutritional Immunology at the University of Copenhagen. Originally from Québec, Canada, she holds an MSc and PhD in Molecular Medicine from Université Laval in Québec City. Her doctoral research focused on 'Nutritional Interventions in the Context of Obesity', with a particular emphasis on gut microbiota. After completing her PhD, she conducted research at McMaster University and the University of Gothenburg before moving to Copenhagen in 2021. At the Center for Basic Metabolic Research (CBMR), she is currently investigating natural AMPK activators in primary hepatocytes. Her research interests include host-microbe interactions, particularly in relation to the gut-liver and gut-brain axes, and localized chronic inflammation. Choi aims to bridge her knowledge and expertise in metabolism with applications in immunometabolism, fostering a translational research mindset. She has been involved in collaborations with various research institutions globally, enhancing her academic and professional network.
