Professor Dr. Bo Jørgensen

Biography

Bo Munk Jørgensen is an Associate Professor at the Technical University of Denmark. His research expertise includes analytical biochemistry, particularly focusing on instrumental methods and multivariate data analysis. His work encompasses enzymatic analyses, capillary electrophoresis, NMR-spectrometry, and NIR-spectrometry. He has contributed significantly to the analysis of physical and chemical sensory quality parameters in fish muscle, addressing aspects such as water distribution mobility, protein changes, and critical quality attributes throughout the production chain. Jørgensen has served as both project manager and participant in multiple international research projects, contributing to advancements in the field of biochemistry and fisheries research. Additionally, he has taken part in evaluating Ph.D. dissertations across several prominent universities. His research interests further extend to the development of instrumental methods for determining chemical and physical quality parameters in fish and studying enzymatic quality deterioration during fish storage.
