Dr. Eugene Won

Biography

Eugene Won is a Senior Research Associate in the Department of Animal Science and an Academic Coordinator at the Shoals Marine Laboratory. His doctoral research focused on endocrine regulation of appetite and growth in fish, and he has extensive experience in the aquaculture industry, specifically with sturgeon and striped bass production and seafood sustainability. At Cornell, he aims to foster efficient practices to enhance the U.S. aquaculture industry which is crucial for alleviating the pressure on wild fish stocks and improving national food security. His research primarily addresses the development of sustainable aquaculture feeds. He investigates innovative solutions for sourcing dietary protein, which is a significant challenge for the aquaculture sector. His projects explore utilizing seafood processing byproducts and invasive species like carp for developing high-quality aquafeeds. Additionally, he is involved in extensions and industry collaborations, advising on challenges and solutions in aquaculture. In his teaching role, he instructs courses such as Fish Physiology and provides mentorship to undergraduate students in related fields.
