Biography

Jae-Hyuk Yu is a Professor in the Department of Bacteriology at the University of Wisconsin-Madison. He received his B.S. in Microbiology from Seoul National University, followed by an M.S. in Food Science and a Ph.D. in Genetics from the University of Wisconsin-Madison. His postdoctoral research was also completed at Texas A&M University. His research interests primarily focus on the biology of fungi, particularly their metabolite production and the molecular genetics of mycotoxin biosynthesis, with a strong emphasis on food safety. His laboratory has developed innovative food-grade fermentation processes aimed at detoxifying harmful mycotoxins such as aflatoxins using filamentous fungi. He is recognized for his work on the applications of food-grade fungi in agriculture and food processing, as well as in the biotechnological production of antimicrobial agents. Throughout his career, Jae-Hyuk has published extensively on the genetic regulation of fungal development and secondary metabolism, significantly contributing to our understanding of fungal biology and its implications for human health and agriculture.
