Dr. Niyati Parekh

Biography

Niyati Parekh is a dedicated nutritional epidemiologist with a strong commitment to addressing nutrition-related disease outcomes in at-risk populations. Her research program focuses on the intersection of biological and behavioral factors in non-communicable diseases, with particular emphasis on obesity, metabolic dysregulation, and cancer. She employs multidisciplinary approaches integrating disease biology, nutritional biochemistry, epidemiology, and biostatistics. Parekh's work leverages existing data to identify dietary patterns and determinants associated with biomarkers predicting disease outcomes such as obesity, diabetes, and cardiovascular disease. With 75 peer-reviewed publications, her contributions are supported by prestigious awards from the American Cancer Society and NIH. She holds a Master's degree in Clinical Nutrition from Mumbai University and a PhD in Nutritional Sciences from the University of Wisconsin-Madison. Her extensive training in epidemiological methods has influenced her teaching roles across graduate courses at NYU and study abroad sites. Additionally, she has held various leadership positions within the university and professional societies including Director of the Public Health Nutrition program and has contributed to the American Society of Nutrition as Chair of the Nutritional Epidemiology Research Group.
