Stefan studied Biochemistry at the University of Tuebingen, Germany from 1981 to 1986 and completed his Master's in 1987. He subsequently moved to the Research Center Juelich, where he worked on amino acid producing bacteria during his PhD, which he was awarded in 1991. After obtaining his doctorate, he became a research fellow at the University of Illinois in Chicago, supported by the German Science Foundation. In 1993, he was appointed as a Junior Lecturer at the University of Tuebingen in the Institute of Physiological Chemistry and was promoted to Senior Lecturer in 1998. In 2000, he joined the Australian National University as a Senior Lecturer in the School of Biochemistry and Molecular Biology, later being promoted to Associate Professor in 2006 and to full Professor in 2008. He served as treasurer and council member of the Australian Physiological Society from 2005 to 2009.
