Biography

Yongfeng Ai is an Associate Professor and the Ministry Agriculture Endowed Research Chair in Carbohydrate Quality Utilization at the University of Saskatchewan's College of Agriculture and Bioresources. His research focuses on carbohydrate chemistry and nutrition utilization, including the study of crop processing chemistry and extrusion processing for human food, pet food, and animal aquafeed. Additionally, he is involved in the development of resistant starch and dietary fiber to create low-glycemic food and feed options that improve health for humans, pets, and animals. Ai employs novel processing methods to enhance the functional attributes and nutritional quality of pulses and cereals. He has a strong academic background, holding a Ph.D. in Food Science Technology from Iowa State University, and previously earned a Bachelor of Engineering in Food Science Engineering from China Agricultural University.
