Lene Stødkilde-Jørgensen is an Associate Professor at Aarhus University, specializing in Animal and Veterinary Sciences with a focus on Monogastric Nutrition and Circular Bioeconomy. Her research interests include the development of sustainable protein sources from biorefined green biomass for monogastric animals and humans. She investigates the mechanisms of plant extraction that affect protein quality and yield, employing both in vitro assays and in vivo studies, including large-scale trials with pigs and rats. Stødkilde-Jørgensen also examines the impact of feed processing on nutritional quality and explores alternative protein sources. Her work contributes significantly to sustainable animal production and the field of biorefining.
