Dr. Eleanor Beck

Biography

Professor Eleanor Beck is the Head of the School of Health Sciences and a Professor in Nutrition and Dietetics at the University of New South Wales. She holds a PhD from the University of Wollongong, alongside a Graduate Diploma in Nutrition and Dietetics from Queensland University of Technology and a Bachelor of Science (Honours) in Biochemistry from the University of Queensland. With over 30 years of experience in clinical practice and dietetics education, her research interests focus on two key areas: dietetics education and cereal science. Professor Beck has contributed significantly to the development of curriculum and assessment standards in nutrition, and serves as a fellow of Dietitians Australia and the International Association for Cereal Science and Technology. Her clinical research includes collaborations with hospitals and international partners on grains research, particularly analyzing the effects of whole grains on metabolic health. She leads an international working group to establish whole-grain intake recommendations and contributes to enhancing health professional nutrition knowledge.
