Her current research interests include examining plant bioactive compounds that enhance healthy digestion and combat metabolic dysfunction. Elizabeth is fluent in English, Malay, and Tamil, and is an active member of the Australian Diabetes Society and the Nutrition Society of Australia. She has been involved in teaching Food Science and Nutritional Science through laboratory practicals.
