Biography

Elizabeth Barber holds a Bachelor of Science in Food Science and Technology, a Master of Science in Nutritional Biochemistry, and a PhD in Biochemistry and Cell Biology. Her doctoral research focused on exploring mechanisms of an anti-diabetic drug related to glucose transport. Following her PhD, she was awarded the Alfred Deakin Postdoctoral Research Fellowship, where she investigated the effects of omega-3 fats on lipid droplet formation in fat cells. In addition to her academic work, she has experience working with the Australian federal government to develop methods for assessing internal radiation contamination, which are used internationally. As an academic researcher in the Department of Nutrition, Dietetics & Food at Monash University, her expertise lies in the analysis of functional foods and their impact on health through digestion and metabolism. Her current research interests include examining plant bioactive compounds that enhance healthy digestion and combat metabolic dysfunction. Elizabeth is fluent in English, Malay, and Tamil, and is an active member of the Australian Diabetes Society and the Nutrition Society of Australia. She has been involved in teaching Food Science and Nutritional Science through laboratory practicals.
