Dr. Won Choi

Biography

Won Jae Choi is an experienced biochemical engineer with over 20 years of hands-on experience in both public and private sectors. He specializes in the development of industrial microbial strains and enzymes, contributing to the advancement of bioprocesses. His expertise encompasses providing vision and leadership necessary to ensure high-quality scientific achievements and the commercialization of research and development throughout the value chain, from scientific proof of concept to manufacturing and business. Currently, he holds the position of Associate Professor at the Singapore Institute of Technology, where he also serves as the Deputy Cluster Director in Food Chemical Biotechnology. Choi has an extensive background in academia, including an adjunct professorship at the National University of Singapore. His research interests are focused on producing bio-based specialty ingredients, waste stream valorization, and bio-prospecting non-GMO enzyme strains for industrial applications. He has worked on significant projects such as the extraction of bromelain from pineapple wastes, emphasizing the valorization of food waste and the development of plant-based alternatives and cosmetic bio-catalytic processes. His contributions significantly impact the circular economy and biorefinery integrations, enhancing productivity and sustainability in the biotechnology field.
