Professor Jayashree Arcot is a prominent figure in the field of Food Science and Nutrition, affiliated with the School of Chemical Engineering at the University of New South Wales (UNSW). Her extensive background focuses on food nutrient security, particularly concentrating on micronutrient analysis and bioavailability using advanced isotopic techniques. She has led an active research program that aims to enhance the nutritional quality of food through innovative solutions such as nutrient recovery from food waste and the development of biodegradable packaging.
