Dr. Juan Du

Biography

Juan Du is an Associate Professor at the Singapore Institute of Technology, specializing in Food Science. He earned his PhD in Food Science from Purdue University in the United States, as well as a Master's in Food Science from the University of Wisconsin-Madison. Dr. Du has extensive experience in food innovation and biotechnology, focusing on the interactions between proteins and polysaccharides, alternative protein structures, and novel food innovations. His current research includes projects funded by the Singapore Food Story R&D Programme, emphasizing the development of alternative proteins and automation in protein profiling. He has presented his work in academic settings and contributes to various professional organizations such as the Institute of Food Technologists. His academic involvement extends into teaching, where he leads modules on dietetics, food chemistry, and technology, preparing students for careers in food science and technology.
